Chocolate Layer Cake Supreme with Sugar-Free Chocolate Frosting
August 13, 2008
This is the perfect special-occasion or birthday party cake: made with spelt flour and sweetened with maple syrup, it’s light, deeply chocolate, with a creamy vanilla filling between the layers and a rich, pipe-able and fudgy sugar-free frosting spread generously over the sides and top. Your guests will marvel that the cake is free of eggs, dairy, refined sugars, and wheat!
Both recipes (cake and frosting) will appear in my upcoming cookbook, Sweet Freedom, scheduled for publication in early 2009. To receive an email when the book is available, please click on “Sign Up to Order” at right, or email sweetfreedomcookbook@gmail.com

Sugar-free frosting! Do you use xylitol, erythritol, or stevia? I’m always looking for low carb natural recipes, so I will definitely look for this in your cookbook, Ricki. 🙂
