Vegan Macaroons and Gluten-Free Cashew Chocolate Chip Cookies

On the left, vegan macaroons: chewy, intensely coconut, these macaroons will rival any you may have had filled with eggs and sugar.  According to one Bake It Healthy customer, these “are the best I’ve ever tasted!”  On the right, cashew chocolate chip cookies: a shortbread-like base studded with dairy free chocolate chips.  For the second recipe, see the original post  here.
